What you are describing can be mostly accomplished with TimeTrex using custom Permission Groups except that regular employees are unable to see any other timesheets or schedules except their own as this is an administrative function. TimeTrex is only able to allow multiple supervisors to verify timesheets on a per employee, per pay period basis.

Do you want to round the Lunch Out punch only or both Lunch In/Out punches? Please provide more examples with differing lunch times so we can understand your requirements better.

TimeTrex does not provide the option to customize the names of the fields you are referring to.

When an employee is not assigned to a Pay Period Schedule any punches that are made by (or for) that employee are left in limbo, so to speak.
