Is there a report I can run that breaks down total wages by day of the week?

In the new interface, yes.
However when you say "Day of week" are you referring to "Mon, Tue, Wed, ..." over multiple week period, or are you just wanting wages split out for each day of whatever period is defined?
Example 1 (Time Period: two weeks) :
-----------------------------
Week 1:
Mon: 16hrs
Tue: 16hrs
Wed: 16hrs
...
Week 2:
Mon: 16hrs
Tue: 16hrs
Wed: 16hrs
...
Example 2 (Time Period: two weeks):

Mon: 32hrs
Tue: 32hrs
Wed: 32hrs

Like example two.
I ran a report of my sales - year to date - by day of the week in my accounting software.
I would like to run a report in timetrex that shows labor by day of the week - year to date.

If you go to Report -> TimeSheet Reports -> TimeSheet Detail, then in the Template dropdown, select the last template called "All Time+Wage By Employee/Day Of Week". This template is split up by employee, if you don't want that simply remove the "Full Name" column from the Display Columns, Group By, Sub-Total By, and Sort dropdown boxes.
