Currently using version 2.0.2.
Is there a way to show changes to the Authorization Hierarchy through the Audit Trail Report (or any other method for that matter)?

Not the exact changes, just that changes occurred.

And what settings do I put in to see that changes occurred?

Sorry, I was mistaken, this functionality isn't available in the version of TimeTrex that you are running.
