Is it possible to install multiple companies on the same machine?
If not then is it possible to restrict some admin users only to a given set of employees?

Yes, with TimeTrex Business or Professional Editions you can setup multiple companies within a single TimeTrex installation.
You can also restrict who/what employees can see using a combination of the Permission system with hierarchies.
