Edit Pay stub format

Is there a way to edit the format the pay stubs are generated in? (Community Edition)
Basically there are some fields I would like to remove

You would need to modify the source code directly in order to do that.

So it could be done if I download and install it in my own instance, but not in the hosted instance?

The hours (everyone here is salary), the hire date and the ssn

Yeah, you would definitely need to modify the source code to remove those items, which would also render the pay stubs illegal in some jurisdictions too.
